    I’m eating a low carb diet, but love sauerkraut, how do I know how many carbs there are in fermented food? I presume that since the fermentation uses the sugars in the food, I can’t just put the recepie through a food calculator I think.? I’m looking forward to making my own fermented food!

      Birgit, If you lacto-ferment a food, its carbohydrate content goes down. If that food is OK for a low carb diet before it’s fermented, it is surely “OKer” afterward.
