Hello friends! I am in the “Land of Eternal Spring” with my husband and his family. Its winter, the high is in the 70s and the weather is nice. We are in Cuernavaca, Mexico to celebrate Christmas with my father in-laws BIG family. He’s the oldest of nine so you can imagine how many nieces, nephews and cousins there are.  Mucho! It’s the first time I’m meeting the family and It’s a little overwhelming but everyone is so welcoming and I am having fun. I hope you are all enjoying the holidays and spending quality time with your families too.

After the holiday feasts on sweets and filling meals you may be craving something healthier and lighter. It’s not even Christmas yet and I am already planning my strategy to get back on track.

The Smoked Salmon Nori Rolls with Kraut will be part of my weekly meal plans when I get back. They are perfect for lunch served with a salad, an appetizer or snack. They are quick and easy to make and will hold you over for a few hours. The smoked salmon and avocado is rich and satisfying and the Carrot and Radish Sauerkraut adds a punch of flavor. My favorite part is the very thin slice of lemon at the end that cleans the pallet.

This recipe was inspired by the “Daniel Roll” which is a salmon sushi roll topped with paper thin slices of lemon. There is a chef at my favorite sushi place, PB Sushi in San Diego named Daniel who made this for my husband and I one night (its not on the menu) and now we ask for it every time.

The salmon and paper thin lemon slices were inspired by the Daniel Roll and the sauerkraut was my added twist. It’s also another way for me to show you how to bring more flavor to your food using sauerkraut. Nori rolls are a perfect food to stuff with homemade sauerkraut and are versatile, because you can stuff them with whatever you want and they will taste good.

With the New Year coming and many resolutions revolving around health, this is the perfect food to add to your diet. The salmon and avocado are full of satiating healthy fats, the seaweed is packed with minerals and vitamins and the sauerkraut is full of live enzymes and probiotics. Its the perfect food to kick start a new health regimen and it tastes delicious.

Smoked Salmon Nori Roll with Kraut

Ingredients
  • 1 Sheet of Roasted Seaweed Nori
  • 2 Slices of Wild Caught Smoked Salmon
  • ¼ Avocado
  • 2-3 tbsp Carrot and Radish Sauerkraut (the ginger kraut or basic kraut would be good too.)
  • Micro greens or sprouts
  • 1 Lemon
  • Zest from 1 lemon (optional)
Instructions
  1. Lay a nori sheet out on a flat surface.
  2. Top with smoked salmon.
  3. Top with thin slices of avocado, sauerkraut and micro greens or sprouts.
  4. Carefully roll the seaweed up.
  5. To seal the nori sheet rub a little bit of water on the edge.
  6. With a sharp knife, cut it into bite size pieces and place on a plate.
  7. Slice the lemon into very thin slices and place it on top of each bite sized roll.
