Smoked Salmon Nori Roll with Kraut

- Lay a nori sheet out on a flat surface.
- Top with smoked salmon.
- Top with thin slices of avocado, sauerkraut and micro greens or sprouts.
- Carefully roll the seaweed up.
- To seal the nori sheet rub a little bit of water on the edge.
- With a sharp knife, cut it into bite size pieces and place on a plate.
- Slice the lemon into very thin slices and place it on top of each bite sized roll.
